Here is a blast of omega-3s for your morning. For people who are always on the go, baking eggs in avocado epitomizes the “power breakfast”. Easy, fast and delicious.
- 2 ripe avocados
- 4 fresh eggs
- 1/8 tablespoon pepper
- 1 tablespoon chopped chives
- Preheat the oven to 425 degrees. Cut the avocados in half and carefully remove the pit. Put avocados open side up in a large baking dish. If they are small avocados, scoop out a little of the extra flesh to make more room. I would not recommend using large farm eggs as it will most likely result to a mess.
- Crack an egg in each avocado half and sprinkle with sea salt and pepper. Place in the oven for 15-20 minutes or until egg is desired doneness.
- Top with desired toppings while still hot (I typically use chives) and enjoy.
Note: Include paprika to add some heat to this simple dish. Enjoy!
